I won’t say I’m a foodie, but when it comes to experimenting, I love it!!
I’m going to share a true story, I was craving grilled chicken, and I ordered it. I couldn’t finish it, so I kept it in the fridge. The next day, I felt like eating something spicy (I am sure you’ll wonder if this happened during my pregnancy, no it didn’t, I sometimes have weird cravings at awkward hours). Anyway, back to my story, I decided to make a spicy chicken sauce with the grilled chicken and spinach I had in the fridge, and that was the outcome. I ate a lot that day! My husband and I enjoy it with parantha and chilled orange juice. (at this point, my mind is wandering away 🙄) Don’t worry; I’ll share the recipe with you 😊.
Chicken and spinach sauce: Ingredients
– Onions
– Fresh pepper
– Tomatoes
– Jollof spice
– Shredded chicken
– Granulated pepper
– Chopped spinach
– Salt
– Maggi
– Curry
– Thyme
– Ginger and garlic spice
(You can enhance it by added fried eggs)
Steps.
1. Fry chopped onions for about two minutes.
2. Add chopped tomatoes and pepper to the pan.
3. After about 2 minutes, add the shredded grilled or fried chicken to the pan.
4. Add your seasonings (salt, Maggi, and so on).
5. Stir and fry on low heat for 5 minutes.
6. Add the spinach to the mix.
7. You’re set for a sumptuous meal.
You can eat it with rice, yam, potatoes, bread and so on.
Other ideas for a leftover grilled chicken (that you can modify to your taste) include:
1. Chicken cheese sauce
2. Chicken and corn soup using knor corn soup spice
3. Noodles and shredded chicken
4. Shredded chicken soup
5. Mac and cheese with shredded chicken
In summary, make sure your leftover chicken is still good. I don’t think I need to explain further 🙂
